Blue Collar. DIY. hardcore punk fanatic. Chef Pablo Zitzmann has always found a way to make it happen.

Growing up playing in punk rock bands and skateboarding, Pablo understood from an early age the concept of community, hard work, and resilience. His love for Asian flavors began at an early age when Pablo’s dad used to take him to Teppanyaki restaurants in his native Bogota, Colombia, and though, Pablo grew up in a German/Mexican immigrant household, Asian flavors were The Ramones of food for him.

Life took him to experience life in Hong Kong, Hawaii, and Japan, where he dove deeper into the culture and the food. Pablo has been recognized for his work at No Name Chinese, Zitz Sum’s predecessor, and was able to beat Iron Chef Bobby Flay in his own kitchen. Zitz Sum is the beginning of Pablo’s journey to find out who he is as a cook, a leader, and a small part of the ever-evolving Miami restaurant scene.

Born in Georgia. raised in Chile. Pastry Chef & Owner, Natalia Restrepo, brings comfort & familiarity to our menu.

Responsible for our bread program, desserts, sweets and bomb a** family meals, Natalia has always found happiness with flour and eggs. From managing the front of the house of multiple restaurants in Chile to working for Ferran Adria — the jefa has done it all.
